Omelette with Yellow Bean Soy

In a hot pan, add the olive or coconut oil. Add the sliced silverbeet, capsicum & garlic and continue to cook on high heat until the quantity has reduced by half - remove from the pan and set aside.

Whisk the eggs together with the sesame oil.
Bring the pan back up to a high temperature with a little olive or coconut oil.
Add the egg mixture and create an omelette around the base of the pan.
Turn the heat off once the eggs are cooked.

Add the silverbeet mixture on to the omelette towards one side of the pan.
Fold the egg on top and seal the omelette.

Flip the omelette over on to a plate and garnish with fresh coriander and spring onion.
Top with yellow bean dressing and the juice of 1/2 a lime for an extra zing.

 

Ingredients -

  • 50ml conscious flow yellow bean soy dressing

  • olive or coconut oil for cooking

  • 2 or 3 eggs

  • 1 teaspoon sesame oil (optional)

  • 1 clove garlic, minced

  • 1 capsicum, seeded & sliced

  • 3 silverbeet leaves & stalks, sliced

  • 1 spring onion, sliced to garnish

  • 3-4 sprigs coriander, to garnish

  • juice of 1/2 a lime (optional)
